The one thing I wish I knew when I started in the restaurant industry is that you need to be confident and take action/decisions on your own.

There is no hand holding and the business can be ruthless at times with competitive rivals wanting your customers, you need to be strong at the hardest times, trust in your gut and always be confident in front of your staff and managers as they will look at you for direction.

Always have a master plan of what you're trying to achieve and constantly review it daily/weekly/monthly to ensure you are achieving your targets and goals, trust your staff and management and keep them informed and positive.
