Building a great team, in my opinion, takes time, patience and dedication.
It's definitely not easy to build a great team. Because like in all workplaces, sometimes people that you train hard then leave, and you lose the time and effort that you put in to train someone. This can be hard, and most chefs don't like training new staff over and over again. As a Chef, a kitchen team works like a machine and after many hours, days, weeks, months even years spent together you start to become a well-oiled machine.
It all comes down to, are your staff loyal, are they happy, are they being paid enough for all the time and effort that they put into cooking and working? They are also building more experience and more food knowledge, and they are learning something new every day to make everything worth it.
In my experience, I stayed at restaurants because it was a new challenge. I loved learning something new every day it made all the hard work and long hours worth it and as my experience grew so did my salary.
Building a team takes time so be patient and know it's going to take a lot of effort. However, in the end, it will all be worth it!
