One of the things no employer will ever tell you when you first set out in our industry is that they want you to shine, but they're not going to give you the time to do it, that's up to you!.

How much I could experience, see and taste through training, experience and travel within the industry.

A good friend tweeted this week “Overheard whilst leaving the restaurant, 'I've booked here and another place round the corner, shall we look at the menus and decide?' I thought people were better than that now.”

I am grateful for all the knowledge I gathered in my career and I am glad I have worked with such passionate individuals that were happy to share their knowledge with me. 

Running restaurants is about so many priorities; great staff, service, atmosphere, marketing and quality of food and drink, it's akin the plate spinning with so many things to think about and prioritise all of the time.
